Marshmallow consultant

Marshmallow and aerated candy development

Marshmallows are mostly air, which is what makes them hard to get right. I teach the aeration lab in the UW-Madison Candy Course and have developed vegan marshmallow and aerated gummy formats in industry.

Questions

What does a marshmallow consultant help with?

Getting density, texture and shelf life right, whether that’s a new marshmallow, a gelatin-free or vegan version, a fix for one that shrinks or weeps, or scaling up.

Can you make a vegan marshmallow?

Yes. Without gelatin the foam is built and set differently, so the process changes along with the recipe. It takes some development, and it’s worth doing carefully.

Why do my marshmallows shrink or get sticky?

Shrinking usually means the foam is losing air or water; stickiness usually means moisture at the surface. Both come back to the formula, the whipping and the drying, which is where we’d start.

Do you work on other aerated candy as a marshmallow consultant?

Yes. Nougat, aerated chews and other whipped candy use the same foam science, and I work on those too.
