Questions
Can you make my candy gelatin-free or vegan?
Usually, yes. Pectin, starch and other gelling systems can replace gelatin, but each one sets differently, so the formula and process change with it. We work out which fits your candy and your equipment.
How do you lower the cost of a candy?
By looking at the whole formula and process: ingredient choices, usage levels, cook and cycle times, and losses on the line. Each change is checked against texture and shelf life before you switch.
What does clean label mean for candy?
Usually a shorter ingredient list, with fewer additives your customers wouldn’t recognize. There’s no single definition, so we start from what it means for your brand.
Do you help find suppliers?
No. Sourcing isn’t part of my work, but I can tell you what an ingredient needs to do so your purchasing team can find it.
